Abstract
Gastronomija se smatra kombinacijom znanosti i umjetnosti, a ogleda se u odabiru sastojaka, pripremi i prezentaciji hrane. Turisti, kroz nju, imaju priliku upoznati lokalne kulture, tradicije i način života određenog naroda. Osim navedenog, ona je važna u grani turizma jer pruža kulturološki doživljaj, obogaćuje iskustvo posjetitelja, doprinosi ekonomskom razvoju te pomaže u promociji destinacije. Fine dining se odnosi na vrhunsko iskustvo objedovanja, a fokusiran je na kvalitetu hrane, usluge i atmosfere. Kreativnost se predstavlja ključnom kada se govori o fine diningu iz razloga što se kuhari trude stvoriti nova jela i nadograditi postojeća. Ovakvo iskustvo predstavlja kombinaciju visokokvalitetne hrane, odlične usluge i otmjenog okruženja kako bi gosti mogli uživati u ekskluzivnom gastronomskom doživljaju. Ovaj rad odgovara na naslovno pitanje „Što je bitno posjetiteljima splitskih restorana...” analizom recenzija objekata s Tripadvisorovog popisa fine dining restorana u Splitu. Cilj rada je bio sažeti is kustvo prosječnog posjetitelja restorana te pronaći prednosti i mane u recenzijama pojedinog restorana, što je napravljeno grupiranjem podataka po kriterijima doba godine, tipu gosta, te elementima ponude.
Abstract (english)
Gastronomy is considered as a combination of science and art, and it reflects itself in choice of ingredients, preparation and presentation of food. Through it, tourists have an opportunity to get to know local culture, tradition and certain folk’s way of life. Other than that, food plays an important part in tourism, since it connects cultures, enriches the experience of the visitor, contributes to economic growth and helps promote the destination. Fine dining is a term describing an exquisite experience of dining, while being focused on food quality, service and atmosphere. Creativity stands out when talking about main points of fine dining, and that can be observed in the chef’s efforts to create new intricate dishes and elevate the existing ones. This kind of experience represents a mixture of hight quality food, excellent service, and classy atmosphere so that the guests could enjoy an exquisite gastronomical experience. This paper answers the titular question of “What is important to visitors of restaurants in Split” by analysing restaurant reviews from the Tripadvisor web page. The goal was to unify the experiences of each reviewer and find strengths and flaws using the reviews, what was done by grouping the data by time of year, type of guest, and elements of the offer.
